What is with the big eyes and little muzzles? :\

It's just the show style. They're all based on the original sketches done by Lauren Faust, aside from a few acceptions (such as Prim Hemline, who has a much larger muzzle). Stallions however have a much longer muzzle, and it seems that the more masculine the stallion, the larger and broader the muzzle.
Of course, that's just what I've observed. ^^
