why did they delete kopa?

They deleted him, because he would not fit in story, at first Simba was suppose to have male cud, soon they quickly added him sister. She quickly overgrow male cub in importance and soon male became just unimportant side character, and they removed him. In development those two had many names, but Kopa was not one of them. But if the male cub would stay, he probably would be named Kopa.
And they also wanted to make movie different, we already seen male cub in first movie. Also he would not fit in "Romeo and Juliet" styled story second movie has.
There are many fan stories about what happened to Kopa(only stories he was mentioned are TLK: The Six New Adventures), but there is no official explanation made by Disney.
About him making story better could be thing of personal taste, maybe, maybe not. We will never know, but at least in my opinion, second movie was great, and I am happy they made it as it is, because it lives up to reputation of original. Original was still better, but second one did pretty good job.
