Indeed, no one knows for sure. Line "My, how you've grown!" is suppose to be her, but there is no solid evidence about it. Line is spoken by actress who gave voice to Sarafina in first movie, which leads to belief that indeed is Sarafina. So it is up top you, but I would say that is her. Other than that, I there is nothing about what happened to her after Scars takeover, if memory serves. She does however appear in Six New Adventure books, during Scars regin, that is if books are not too canonical in your opinion.

Sarafina was supposedly the lioness in TLK 2 that said to Kiara "My, how you've grown." No one knows for sure, though, brcuase her name isn't mentioned in the end credits. So she might have survived Scars reign.

After Nala and Simba grew up, she was never really mentioned ever again. There is speculation that she did appear in Lion King 2 as the lioness to say to Kiara, "My, how you've grown," but there is no solid evidence that that was her. However, you must also taken into account that this is a Disney movie. No one except some villains ever really die in Disney movies so it is reasonable to say that Sarafina survived despite any concrete evidence confirming or denying her death.
