At the end of Lion King one the cub that Rafiki lifts in the air is sort of a yellow colour that Simba was when he was a baby and the cub had a bit of hair sticking out from the top of his head. But in the second one the cub had no hair sticking up and was a completely different colour. I know there is the whole story of Kopa but the Lion King franchise never explained about him or the cub swap and I find that confusing

Kopa is only in the Books. It's Kiara in both movies , but TLK 2 Animators messed up. :P

No, TLK II had new animators, new writers, lower budget and lower expectations. They didn't care. Besides, what didn't TLK II come out several years after the first? Disney's Direct to DVD sequels were done with their TV show department, if I'm not mistaken.
