A "Daemon" is an animal spirit of a human being in Lyra's world (This isn't a spoiler, for a simple search for "Daemon The Golden Compass" in Google will bring up hundreds of articles anyway). This Daemon follows its human wherever he/she goes, and it is almost always the opposite gender of its human counterpart. Also, until the human turns into an adult, the Daemon will be able to take on several forms. When its human counterpart has become an adult, it will take on the shape best fit for the personality of the human it belongs to.
The two are connected very intimately and close, and they can't stray far from each others.
There is a test somewhere you can take in order to see what Daemon you would have if you lived in Lyra's world, but I can't remember the link.
So, why do people shorten the words? Because we're lazy (me included). I use all of those abbreviations as well. "Charrie" I've, admittedly, used way too often xD. Why people shorten Anthromorphic, I've no idea though O.o It's not really that hard to write, is it?
