Yes, I believe that is an example of something that's known as foreshadowing, which is a literary device that the author (or, I guess in this cae script writer or whatever) uses to leave little hints about plot developments that come later in the story. It's not only used in Shrek 2, it's been used in tons of stories since...like...well stories have been first written...
