That really comes down to opinion, unless we can ask the people who designed them what breed they had in mind. I personally believe they're Huskies - all of them (except, of course, for the obvious ones like Balto, Dixie, Morse, Sylvie and Doc) - but others seem to think it goes like this:
Nikki = Chow Chow
Kaltag = Chinook
Star = Alaskan Klee Kai OR Alaskan Husky

Star = Alaskan Klee Kai OR Alaskan Husky what is an Alaskan Klee Kai?? Normally I wouldn't turn to DBI for information (have you seen the list of "designer dogs" they have?? Sheesh), but they do have some pretty basic facts there, and it's not exactly "lies" 
EDIT: Ooh, bummer... just read through it. Turns out it is lies -_- Most of it, anyway. Sorry.

In all honesty.. and I've said this before.. I doubt the animators really went into great detail when deciding the breeds of the dogs. They MIGHT be Alaskan klee-sha-whatjemethingys but chances are, they are just supposed to look like huskies and malamutes.

I think Kaltag is Chinook, Star: little different with Alaskan local dogs, then Nikki: Chow-chow... really!

I think they are all just huskies. They only look different so it is easy to tell the difference between them.

I dont think that Star is a breed. He maybe a made up breed
